Winter is the perfect season to cozy up with a warm, nourishing bowl of soup. Whether you're looking for something packed with hidden veggies, bold flavors, or creaminess to satisfy your comfort craving, these three soup recipes will satisfy your cravings and keep you feeling your best.

Hidden Veggie Soup

This hidden veggie soup tops my list because it uses a lot of staple ingredients that I have in my house, yet if I'm short one it is easy to make a substitution or omit it without missing it too terribly. All the ingredients provide a ton of nutrient density and packs a punch with great flavor. Did I mention that it is kid approved? That is important to me, as I have three young children to nourish. 

Ingredients:

  • 2 Yellow Onions (roughly chopped)
  • 3 cloves Garlic (chopped)
  • 1 cup Carrot (roughly chopped)
  • 1 Red Bell Pepper (roughly chopped)
  • 1 Sweet Potato (small, roughly chopped)
  • 1 cup Celery (roughly chopped)
  • 3 cups Fire Roasted Diced Tomatoes (cups x 15oz cans)
  • 5 cups Organic Vegetable Broth (divided)
  • 1 tbsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 2 tsp Oregano
  • 2 tsp Dried Basil
  • 1 tsp Onion Powder
  • 1 tsp Dried Thyme
  • Sea Salt & Black Pepper (to taste)
  • 3/4 cup Cashews (soaked)
  • 3 cups Baby Spinach (chopped)
  • 2 cans Great Northern Beans (15oz each, drained and rinsed)

Directions

  • In a large soup pot over medium heat, saute onions and garlic using water or veggie broth. Add in the carrots, red bell pepper, sweet potato, celery, tomatoes with their juices, and 4 cups of veggie broth. Stir in the spices and bring to a boil. Reduce heat to medium-low and simmer uncovered for 20 minutes or until veggies are tender.
  • While the soup simmers, blend cashews and remaining 1 cup of broth until very smooth.
  • Use an immersion blender to blend the soup until mostly smooth. Stir in the cashew cream, spinach, and beans. Let simmer for 5 more minutes.

If you don't have great northern beans on hand, I've used chickpeas with great success! You can also add more heat to the recipe or swap out some of the herbs for your preferred favorites. 

Burrito Soup

If you love Mexican food as much as I do, or maybe if you don't, you'll enjoy this simple yet flavorful Burrito Soup. This recipe is about 4 servings and can easily be made in a slow cooker, or stove top cooker. Ingredients

  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1/2 green bell pepper (chopped)
  • 2 cups black beans (or 15 oz, drained and rinsed)
  • 3 cups fire-roasted tomatoes (or diced tomatoes)
  • 4 cups vegetable broth
  • 1 cup corn (frozen or fresh)
  • 1 cup uncooked brown rice
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 2 tsp chili powder
  • Salt and black pepper to taste
  • 1 lime (juiced)
  • 4 cups kale (chopped)
  • 1 avocado (peeled & diced)
  • 1/4 cup organic salsa

Directions

  • In a large pot, saute onion and garlic over medium heat until softened. Add green bell pepper and cook for another 2 minutes. If using a slow cooker add all ingredients to cooker except kale, avocado and salsa. Cover and cook on high for at least 4 hours. You can cook it longer depending on how thick you like your soup.
  • Stir in beans, tomatoes, broth, corn, quinoa, and spices. Bring to a simmer and cook for about 30 minutes.
  • Add lime juice, kale and salsa about 10 minutes before serving. Adjust seasoning, and garnish with cilantro and avocado before serving.

What I love about this recipe is that you can freeze and store it in the freezer for up to two months. Unfortunately, it just doesn't last that long in my house. I love to bake up some corn tortillas to make chips and if we have leftovers it makes for a great snack or appetizer! 

African Sweet Potato Peanut Soup

I'll admit when I first saw this recipe I was a little skeptical. After giving it a shot I was sold! It is so creamy, delicious and filling! If you are not familiar with the cones and cutting styles of Saladmaster, simply chop or dice to your desired size and texture for the soup ingredients. I also invite you to look at clean cookware. I love adding more ingredients to it like TVP or garbanzo beans. What kind of add-ins can you think to incorporate? 

Ingredients

  • 1 onion (processed using cone #2)
  • 4 garlic cloves (minced using cone #1)
  • 1 tsp minced ginger (cone #1)
  • 3-4 sweet potatoes (processed using cone #3)
  • 1 large can diced tomatoes (with juices)
  • 1/2 cup organic natural peanut butter
  • 6 cups vegetable broth (or water)
  • 2 tsp cumin
  • 2 tsp ground coriander
  • 1/4 tsp ground cayenne pepper
  • 1 tsp salt
  • 1 cup red lentils
  • 5 cups finely chopped Swiss chard (or kale)

Directions

  • Process onion and sweet potato with a saladmaster machine. Preheat a 7-qt roaster and cook onions for 2 minutes. Add garlic and cook another 2 minutes.
  • Stir in ginger, sweet potatoes, tomatoes, and peanut butter.
  • Add broth, lentils, and spices. Bring to a simmer, cover, and cook for 30 minutes until lentils are tender.
  • Stir in Swiss chard and cook for 2 more minutes until wilted.
